Gazpacho Soup

Have you got  many tomatoes from your garden today? Did your husband buy too many tomatoes from farmers market in the weekend?  You don’t think your kids will eat more than 2 slices of tomatoes?

Let’s make Gazpacho Soup, then!

Prepare 6 tomatoes (medium size.), 1 cucumber, 1/4 of Spanish onion, 1 crobe of garlic* (it’s actually better you chop it and sauté with olive oil) , 2  table spoons of virgin olive oil and 2 tea spoons of salt. Mix all with food processor or juice mixer until it gets very smooth.

I sliced a bread and fried them with olive oil. You can enjoy this crispy slices of bread with dipping into the soup!

*For your health information, Tomatoes are high in lycopene, an antioxidant that is thought to provide beneficial protection from prostate cancer in men.*

Make sure you keep this soup in your refregirater for at least one hour before you serve.  It would be a great starter for your dinner in summer or even for your light lunch! Enjoy!!
