Corn Potage

The Christmas is approaching and you might want to learn something you can cook for your special Christmas dinner.

I would like to share one of my favorite soup “Corn Potage”.

It is so easy to make but taste is so good.

Prepare….

1 can of corns, 6 cups of milk, 1 cup of heavy cream and 2 big table spoons of chicken soup stock.

Heat milk in the pan with medium.  Add the whole can of corns and boil until cones get very soft with medium heat with paying attention not make it too boiled.

Once you see that corns get very soft enough, put them into the mixer and mix them very well until they get very smooth.

Put the soup into the pot again with low heat and add heavy cream and chicken soup stock into it.

Try to taste to see if you would like to add salt and pepper.

To make home-made crouton….Cut really small cubes with a slice of bread and fry with canola oil. Be careful not to burn them. Fry them with medium heat.

 

This soup is from my mom’s recipe which brought me always very good memories about eating with my family. All of my family loved having this soup and I still remember we were all competitive about who was going to get the last bowl of soup!
