Roasted Cauliflower & Garlic Cream Soup

This soup is for you with hot & cold. I made this soup as cold for my guests beside our barbecue dinner.

When we have children for the barbecue dinner, it is a bit difficult to let them eat vegetable since adults are usually busy with preparing for the barbecue or chatting!

Prepare one block of Cauliflower and 3 cloves of garlic.  Roast them very well with 1 big table spoon of butter with medium heat until they will get very nice light brown.

This roasting part is very important for this soup. The flavor would be very different!

Add 4 cups of water and 1 big table spoon of concentrated chicken stock.

Boiled them until they will get very soft.

Put them into the mixer ( I am using Vitamix and it has been so great!) to make them very smooth.

Add 4 cups of milk & 3/4 cup of heavy cream and mix again very well.

Make sure with tasting if you need more salt & pepper.

Warm or Cold, it’s your choice!

It’s very important that we try to eat all different kind of vegetables. This soup is the best way to feed somebody who doesn’t love eating vegetables since it’s invisible and taste great!!
